Sasha's Kitchen: Superbowl Special - Turkey Chili



I really haven't eaten a lot of chili over the years - I guess I generally assumed I wouldn't like it with all those beans. But, last weekend we went over to a friends' house to watch the Jets-Patriots game and they made a delicious turkey chili. I did eventually get the recipe, but not before I attempted to replicate it with my own recipe. Remarkably, the two recipes were quite similar, and I have come up with this fusion that I will share as the perfect Super Bowl recipe. I really love the use of turkey in chili, as it is much healthier and more to my liking than the traditional meats used in chili. In addition, the toppings here are key - I used nonfat sour cream, grated cheddar cheese and sliced avocado as the toppings here, along with some tortilla chips of course. The tomatoes and beans are all from the delicious shipment of canned goods that I got from ShopRite. So this is the perfect recipe to watch the big game!

Sasha's Turkey Chili
1 T olive oil
2 medium onions, diced
1 1/2 tsp dried oregano
1 tsp ground cumin
1 1/2 lbs lean, ground turkey
1/4 cup ancho chili powder
2 bay leaves
1 T unsweetened cocoa powder
1/4 tsp cinnamon
1 28 oz can of while tomatoes
2 1/2 cups of low sodium chicken stock
15 oz can of white beans
15 oz can of black beans
handfull of chopped cilantro
top with grated cheddar, diced avocado and fat free sour cream


To make the chili, first heat the oil and saute the onions until light brown and tender, which should take about 10 minutes. I also added a bit of fresh red pepper here, but I think it didn't really need that. Add the oregano and cumin and stir. Increase to medium high heat and add the ground turkey, stirring to cool, and breaking it up into small pieces. Stir in the ancho chile powder, bay leaves, cocoa powder, cinnamon and a bit of salt and pepper to taste. Puree the can of tomatoes and mix in the chicken stock and the tomatoes. 

Bring the mixture to a boil and then reduce heat and simmer for about an hour, stirring occasionally. Towards the end of the simmering (it will reduce, like risotto), discard the bay leaves, and add the two cans of beans and simmer until the flavors are mixed together. You will want to be sure to drain and wash the beans before adding them. Serve warm, with fat free sour cream, chips, sliced avocados and grated Vermont cheddar.

Eric's Kitchen in Jersey City: Guacamole & Chicken Fajitas (Super Bowl Special)



This post is really more about the Guacamole than the Fajitas as we were just trying to use up some leftover Grilled Chicken plus everyone seems to really like my Guacamole. It's a recipe that started as my Mom's but I have evolved it over the years a bit and I honestly think she likes mine more than her own now... I figured this is a good time to post my Guacamole recipe so that people can hopefully enjoy it during the Super Bowl!

These are the ingredients I use for my Guacamole:
2 ripe Avocados
1/2 medium to small tomato, seeds removed and diced
1/4 medium Vidalia onion, minced
1 clove garlic, minced
1 handful of fresh cilantro, chopped
salt and pepper to taste
Some sort of hot sauce or red pepper flakes
Fresh lime juice

I find that if you don't remove the seeds of the tomatoes it get can a bit too watery. I also insist on mashing mine up with just a fork instead of a food processor since the flavors remain more in tact and the consistency feels more natural to me. As long as the avocados aren't under-ripe, this should never be a problem.

The lime juice is probably the second most important step since it also helps to keep the color of the avocado from going brown if you have to set it aside for a while. I've also heard that keeping bits of the rind in your guacamole helps but not sure how true this is...

When it came time for my fajitas I just reheated my leftover grilled chicken with some sliced Pepper Jack cheese and then sauteed some mushrooms and onions. We also added some roasted garlic Green Mountain Gringo salsa, which is by far my favorite salsa.

In the end we had a delicious meal that certainly didn't feel like leftovers.

Sasha's Kitchen: Mom's Mandarin Orange Salad With Caramelized Almonds


The following salad is one of my "famous" family recipes. The origins of this salad are unknown, but it first came into my family via my Aunt who allegedly enjoyed it at a 1977 Pittsburgh Steelers Superbowl Party. If that's true, it might just be the best food ever served at a Superbowl Party. Everyone I have ever made this for has loved it, even the pickiest eaters out there. The way I make it is a little different from the original recipe, but it's good just the same.

Lettuce (I use either romaine or Boston butter lettuce)
1 small can of mandarin oranges juice drained
1/3 cup almond slivers
1/4 cup sugar (approximate)
celery (which I sometimes forget)
balsamic vinegar, parsley and oil for the dressing

Caramelize the almonds in sugar. When they are caramelized, allow them to cool and then either break them apart with your hands or chop in a nut chopper. Note: we use the famous "slap-chop" now to chop apart the almonds. My mom breaks them apart with her hands, but my husband and I both find the process to be unpleasant. Plus, my husband prefers to have the almonds chopped into smaller pieces because he worries that otherwise someone might chip a tooth (this shouldn't really be a problem as the nuts are not that hard, but he is a dentist's son).

Top the salad with the almonds, mandarin oranges, celery and dressing and serve. The original dressing that my mom makes uses both parsley and sugar. I always forget the parsley, and purposefully leave out the sugar because it doesn't need it as there is plenty of sugar already in the caramelized almonds.



This makes a great salad for any occasion, but is also perfect if you are planning to throw a Super Bowl party in January.

Note: if you want the salad to last for two days, you should save the extra caramelized almonds in a Ziploc bag as they will un-caramelize if you leave them into the salad in your refrigerator for many hours.
