Sasha's Kitchen: Grilled Lamb Kebabs with Mango Chutney

Kebabs - perfect for the start of summer grilling season. I made these indoors on a grilling pan rather than on a regular grill, but it still worked out beautifully. I decided to make lamb kebabs this time, though of course there's a million and one ways to make kebabs. This time I decided to do pretty traditional kebabs, and used good quality lamb from Fresh Direct, which I prepared using a somewhat Indian styled yogurt based marinade. I served the kebabs with two kinds of chuntey - cilantro mint chutney and my favorite mango chutney recipe that I have been making since I was a kid. The mango chutney was fabulous with this dish, and hence I decided to share that recipe. Happy Grilling!

Sasha's Lamb Kebabs
2 cups of lowfat Greek yogurt
2 tsp coriander
2 tsp cumin
1/4  tsp cayenne pepper
1/2 tsp cardamom
1 to 1/2 lbs of lamb, cut up into chunks for kebabs

Mango Chutney (recipe loosely derived from this cookbook)
4 francine mangos (you can use 2 regular mangos if you prefer), skinned and cut into small pieces
2 gala apples, peeled and diced
3/4 cup onion, diced
1/2 cup brown sugar
1/2 jalapeno pepper, seeded and minced (you can use a whole pepper if you prefer to add more heat)
1 T minced fresh ginger
3 cloves of minced garlic
1/2 tsp cumin
1/4 tsp cloves
pinch of Kosher salt
pinch of cayenne pepper

Mix the ingredients for the marinade with the yogurt.  Mix with the lamb and allow to chill for about an hour.

To make the chutney, combine all of the ingredients in a large saucepan and cook over low heat, stirring occasionally. Simmer for about 25 minutes until the mixture has a jam-like quality. Allow the chutney to cool before serving.
All ready for the grill!

Using kebab skewers (I used wooden ones, but you could also use metal), prepare the kebabs by alternating the meat with onions and cherry tomatoes and grill away, rotating as you grill so everything cooks evenly.

Sasha's Kitchen: Lemongrass Grilled Strip Steak

I will have to preface this recipe by saying that although it just looks like a slab of meat, it was a great marinade and a delicious thai inspired steak.  I was inspired by my old (but beloved) Caribbean and Pacific Rim cookbook, to create a lemongrass flavored marinade for steak.  My recipe is totally different from the one in the cookbook, but stays true to two things used to flavor the steak: soy sauce and lemongrass.  You can use either fresh or dried lemongrass for this recipe and I recommend fresh lemongrass if you can get your hands on it.  I used a nice organic cut of strip steak for the recipe, which was lean and absorbed the flavors well.

I marinaded the steaks overnight, which gave them a wonderful strong flavor from the marinade.  This wasn't intended as we wound up saving the steak for a day due to some last minute dinner plans.  I took the steak out of the marinade after about 10-12 hours though so not to over-marinate it.  I like how this worked out - the soy and pineapple juice made for a lovely marinade, with flavors of both lemongrass and cilantro.

Sasha's Lemongrass Grilled Strip Steak
2 organic strip steaks
2/3 cup of soy sauce
2/3 cup pineapple juice
5 T lime juice
5 T minced lemongrass
1 T sesame oil
3 cloves of garlic
1/2 jalapeno, diced
1/4 cup fresh cilantro
1 T brown sugar

To prepare the steaks, it is very simple.  Just combine the ingredients for the marinade in a bowl and marinate the steaks overnight (or for at least 5 hours).  Then, use a grill pan to grill the steaks to your liking.  I'd suggest serving with potatoes, fried rice or a salad.  I like this dish with a first course of a homemade Caesar salad.  My husband had his with an egg served sunny side up, which worked nicely, he said.

Sasha's Kitchen: California Burgers

After a long week, grilling burgers on a grill pan is the perfect way to quickly prepare a simple meal without having to spend hours in the kitchen. The following burger recipe, I refer to simply as a California burger, even though it does not contain any avacado like the burgers at most restaurants with the same name.

1 1/4 lb fresh ground beef
hamburger rolls
1/3 cup dijon mustard
2 T honey
juice of 2 meyer lemons
lemon goat cheese

To make this burger, prepare the sauce by mixing the dijon mustard, meyer lemon juice, and honey. You can substitute regular lemons or lemon juice if you cannot find meyer lemons. Meyer lemons are native of California and have a sweeter, distinctive taste compared with regular lemons. I was able to buy them both at Whole Foods and a wonderful market here in Park Slope called Union Market (only a few blocks from my condo and they also sell quince, papaya, key limes and at least 12 kinds of mushrooms).

Grill the burgers on the grill pan and top with the goat cheeese for the last minute of grilling, covering with aluminum foil. Season with pepper, toast the buns and your California burger is read to eat.
