Eric's Kitchen in Jersey City: Strawberry Salad

This is actually my Mom's recipe but I like it so much that I make it all the time. She tries really hard to make healthy food taste great and I think this is her most successful recipe in that regard. It's also a very quick and simple recipe that you can pull together very quickly.
Ingredients:
  1. Spring mix salad greens
  2. Fresh Strawberries
  3. Gorgonzola or Blue cheese crumbles
  4. Sweet and Spicy Pecans (Trader Joe's has some great ones)
  5. Brianna's Strawberry vinegrette salad dressing

My only recommendation with this one is to break the pecans up into more bite-sized pieces as they are pretty strongly flavored and to cut the strawberries into bite-sized pieces as well. Put on dressing as you see fit and enjoy!

  1. I make a similar salad and I recommend doing so with an organic strawberry dressing that is easy to make at home in a Cuisinart miniprep.

    Add the following to the miniprep:
    1/2 cup diced organic strawberries (best in the summer)
    1 diced shallot
    1 T honey (use honey, not sugar to get the right texture whenever you emulsify)
    canola oil (about 1/2 a cup, but you can adjust)
    2-3 T balsamic vinegar
    1 T dijon mustard

    This can also be done with blueberries. The end result is a delicious, creamy dressing that has a beautiful pink (or blue) color.
